Ingredients:
• 250 g Eskort Russians, thickly sliced
• 500 g sweet potatoes, washed and cut
• 45 olive oil
• Salt and freshly ground black pepper
• 45 ml lemon juice, freshly squeezed
• 5 ml whole grain mustard
• 5 ml honey
• 1 chilli, finely chopped (optional)
Method:
- Preheat oven to 190°C.
- Place sweet potato into a baking tray and drizzle over the olive oil, toss to coat.
- Season and bake for 30 minutes, until tender and lightly browned.
- Fry Russian slices until crispy, remove and drain.
- Combine sweet potato and sausage in a bowl.
- Mix dressing ingredients together and season.
- Pour over the salad and serve sprinkled with chilli and rocket leaves.
Option: Serve with Tzatziki instead of dressing.
